The general Tarahumara term for an alcoholic beverage is "Sugíki"; "batári" is used when the beer is specifically made from corn or lichen flour [4]; "paciki" is used when the beer is made from fresh corn stalks [5]. While tesguino made from corn is considered the most sacred, the Tarahumara also make beer from agave[1] and wheat[2], as well as other alcoholic beverages made from fruits such as peaches, berries, crabapples, cactus fruits,and Mesquite seeds [6].

The beer is made from corn kernels which are soaked, then ground up, boiled and left to ferment naturally with wild yeast. A local grass is used in place of hops for flavouring.

So while I was in Mexico one time I tried this stuff. Mind you it is not limited to the Tarahumaras, a lot of Mexicans in the region drink that stuff, and make it. In fact my grandma, and lots of other people in the region used to make it or make it on a regular basis. I tried that stuff and never want to try it again. It looks the exact same color as the jar in the pic. It was also rather thick, I had a hard time getting the flavor out of my mouth, I never want to try that again. Mind you my parents think it tastes good even though they don't drink alcohol or anything, which I guess it certainly is part of the culture.

I'd try it. Who knows? Puerto Ricans eat and drink pretty much anything. Myself? I think I can count the things I wouldn't eat and/or drink with one hand.

It could be worse, they could make it like some other civilizations in that area... by small jawbreaker sized balls using the solid ingredients, then placing one ball at a time in their mouth, chewing it for several minutes before spitting everything in a large pitcher and repeating the process until they have dozens of gallons of spit, saliva, yeast, corn and other various ingredients sloshing around in a large vat waiting to ferment and then happily consumed by the locals without being filtered or screened or anything. I imagine it is like drinking straight vomit mixed with flat stale beer... yum.
