Most wines taste better with age, which is basically continued "breathing" through the cork. It's the same reason why you open a bottle of red a little ahead of time and let it breathe.
Also, the type of wine you want to drink really depends on what you are eating. Some wines taste good with cheese, some with chicken (although, usually white is best with chicken or turkey, and white is best when chilled).
Also, your useless bit of information for the day: whiskey only ages in oak barrels. Once bottled it doesn't age.
