I used to work in a 5star French restaurant, ran by a genuine French chef. He brought in his own recipes from France and I must say, when I went to work there I was redneck, and when I left I felt like a connoisseur!
What are your favorites? It can be of any nationality but what are your favorite "fancy foods" or nice places to eat?
Some of my favorite fancy dishes are:

*Seared Foi Gras in a port reduced sauce.
*Seared Duck in a lemon buerreblanc sauce
*Caviar (in small doses) with sour cream, crackers and chives
*Escargots in a Garlic Eggplant Crème Sauce
*Bananas Foster
*Spinach and Aragula Salad with caramelized pears and a balsamic dressing
